Bristol's Garden Wine Gardens: Foot-Stomping Fruit in City Gardens

Each quarter of an hour or so, an ageing diesel train pulls into a graffiti-covered stop. Nearby, a law enforcement alarm cuts through the near-constant traffic drone. Daily travelers hurry past falling apart, ivy-draped garden fences as rain clouds form.

This is maybe the least likely spot you expect to find a well-established grape-growing plot. But James Bayliss-Smith has cultivated four dozen established plants heavy with plump mauve berries on a sprawling allotment situated between a line of historic homes and a local rail line just north of Bristol downtown.

"I've noticed people hiding illegal substances or other items in those bushes," states Bayliss-Smith. "Yet you simply continue ... and continue caring for your vines."

Bayliss-Smith, forty-six, a documentary cameraman who also has a kombucha drinks business, is not the only urban winemaker. He has pulled together a loose collective of cultivators who make wine from several hidden city grape gardens tucked away in back gardens and allotments across the city. It is sufficiently underground to have an formal title so far, but the collective's messaging chat is called Vineyard Dreams.

City Vineyards Across the World

To date, the grower's allotment is the sole location registered in the City Vineyard Network's forthcoming world atlas, which includes better-known urban wineries such as the eighteen hundred vines on the hillsides of Paris's historic Montmartre area and more than three thousand grapevines with views of and within the Italian city. The Italian-based non-profit association is at the vanguard of a movement re-establishing urban grape cultivation in historic wine-producing nations, but has discovered them throughout the world, including urban centers in East Asia, South Asia and Central Asia.

"Vineyards assist cities stay greener and ecologically varied. They preserve open space from development by creating long-term, productive farming plots inside cities," says the association's president.

Similar to other vintages, those created in urban areas are a result of the earth the plants grow in, the vagaries of the climate and the individuals who tend the grapes. "A bottle of wine embodies the charm, community, environment and history of a urban center," notes the president.

Mystery Polish Grapes

Back in Bristol, the grower is in a urgent timeline to gather the grapevines he grew from a plant abandoned in his garden by a Polish family. If the precipitation comes, then the pigeons may seize their chance to feast once more. "Here we have the enigmatic Polish grape," he comments, as he cleans damaged and mouldy grapes from the glistering bunches. "We don't really know what variety they are, but they're definitely hardy. In contrast to noble varieties – Burgundy grapes, white wine grapes and additional renowned French grapes – you don't have to spray them with chemicals ... this is possibly a special variety that was bred by the Soviets."

Group Activities Across Bristol

Additional participants of the group are additionally making the most of bright periods between bursts of fall precipitation. On the terrace with views of Bristol's glistening harbour, where medieval merchant vessels once floated with casks of vintage from France and Spain, Katy Grant is harvesting her rondo grapes from about 50 vines. "I love the smell of these vines. It is so reminiscent," she says, pausing with a basket of grapes resting on her shoulder. "It recalls the fragrance of southern France when you open the car windows on vacation."

Grant, 52, who has devoted more than two decades working for charitable groups in war-torn regions, unexpectedly inherited the grape garden when she returned to the UK from East Africa with her family in recent years. She experienced an overwhelming duty to look after the grapevines in the garden of their recently acquired property. "This plot has previously survived multiple proprietors," she says. "I deeply appreciate the idea of environmental care – of handing this down to future caretakers so they can keep cultivating from this land."

Sloping Gardens and Natural Winemaking

Nearby, the final two members of the group are busily laboring on the steep inclines of the local river valley. One filmmaker has established more than one hundred fifty vines perched on ledges in her expansive property, which tumbles down towards the silty River Avon. "People are always surprised," she notes, gesturing towards the tangled vineyard. "It's astonishing to them they can see rows of vines in a city street."

Today, the filmmaker, sixty, is harvesting bunches of deep violet Rondo grapes from lines of vines arranged along the cliff-side with the help of her daughter, her family member. Scofield, a wildlife and conservation film-maker who has contributed to Netflix's nature programming and television network's Gardeners' World, was inspired to plant grapes after seeing her neighbor's vines. She has learned that hobbyists can make intriguing, pleasurable traditional vintage, which can sell for more than seven pounds a serving in the increasing quantity of establishments specialising in low-processing vintages. "It is deeply rewarding that you can actually create quality, natural wine," she states. "It is quite fashionable, but really it's reviving an traditional method of producing wine."

"During foot-stomping the fruit, the various natural microorganisms are released from the surfaces and enter the juice," says the winemaker, partially submerged in a container of small branches, seeds and crimson juice. "That's how wines were made traditionally, but commercial producers add sulphur [dioxide] to kill the wild yeast and then add a lab-grown yeast."

Challenging Conditions and Creative Approaches

In the immediate vicinity active senior another cultivator, who motivated his neighbor to plant her vines, has gathered his friends to harvest white wine varieties from one hundred vines he has arranged precisely across multiple levels. The former teacher, a northern English PE teacher who taught at Bristol University developed a passion for wine on regular visits to Europe. But it is a difficult task to grow this particular variety in the dampness of the valley, with temperature fluctuations sweeping in and out from the Bristol Channel. "I aimed to make French-style vintages in this location, which is somewhat ambitious," admits Reeve with a smile. "Chardonnay is slow-maturing and very sensitive to mildew."
